Lime uses in the food industry

LIME FOR NIXTAMAL
Nixtamalization is a traditional process of cooking corn with food grade lime and water, to highlight its nutritional properties and slow decomposition.
A factor that every miller or industrialist must consider is the purity of the lime or the amount of calcium hydroxide available that is being used in the nixtamalization process.
Today, many people continue nixtamalizing with lime of construction, which presents a lower calcium hydroxide concentration, in addition to containing heavy metals and other toxins that can affect the consumers’ health.
That is why, at Grupo Calidra we have developed Nixtacal and Nixtacal Plus, which are food grade limes; both are limes to make tortillas, designed especially to satisfy the needs of dough and tortilla millers and industrialists, which comply with the specifications of the Codex Químico Alimentario, and the Kosher Pareve Certification.
LIME IN SUGAR PRODUCTION
In the process of sugar production, Oxid plays a fundamental role, as it levels the pH to neutrality
It is an alkalizer and precipitant of mineral and organic impurities, also, it allows the product to be clarified and refined more effectively. At the same time, it helps meet food grade parameters.
LIME IN FOOD CONSERVATION AND PRODUCTION
Quimex 95 has a very important participation in the production and preservation of food. It is used in the production of calcium phosphates for the manufacture of baby foods and reconstituted beverages. It is used to neutralize the acidity of cream to make butter, as well as in the processing of water and carbonated drinks, and alcoholic beverages.
LIME ON ANIMAL FARMS
The lime is ideal for disinfecting animal farms, as it prevents parasites, improves veterinary hygiene, and prevents diseases.
Crecicalcio is used to produce food for all types of animals increasing nutrients. It is also rich in calcium, which improves the bone strength of animals.
LIME IN AQUACULTURE
The lime plays a crucial role in the management of aquaculture ponds. The use of Calciomar improves the development of shrimp and fish, they increase rapidly in both size and weight; and mortality also decreases.
In shrimp farming, Calciomar provides the calcium which the animal uses for the formation of the shell, and improves the appearance of the shrimp, keeping them healthy and heavier.
The lime is a natural pond disinfectant, controls organic matter, regulates pH, and prevents the development of bacteria and viruses which could be harmful to shrimp and fish.
